列日鬆餅的起源,據傳是在十八世紀時,由比利時東部城鎮列日(Liège)的一位廚師所研發出來的。其最大特色,就是採用酵母發酵所產生的介於餅乾與麵包之間的紮實口感,以及它表皮上裹著的那一層烤得酥酥脆脆的珍珠糖衣,如果搭配自製的巧克力甘納許一起服用,絕妙的口感與味道,實在令人回味無窮。一起來自製無泡打粉的(巧克力口味)比利時列日鬆餅吧~(文末附影片)
◆ Chocolate Liege Waffles
When yeast meets flour,
When chocolate meets pearl sugar,
It's always pleasant in Liège
With the most memorable flavour.
Liège waffles allegedly originated in Liège, a small city in Eastern Belgium, in the 18th century. Its greatest features include the chewier texture between biscuit and bread (from the use of yeast) and the pearl sugar which caramelises on the outside of the waffle when baked. They are perfect to go with homemade ganache, which can complement the waffle's texture and result in one of your most memorable flavours. Now, come along and make (chocolate-flavoured) Belgian Liege waffles at home. (See video tutorial at the end.)

步 驟(Steps):
(1)
取八十公克的牛奶,倒入一個小杯子或小型玻璃甕。把杯子或玻璃甕放入鍋中,在鍋內加入清水(不是加到杯子內),直到水位高度大約達到牛奶的一半高度。開中小火。加入一支烹飪用的探針溫度計在牛奶裡。等溫度到達約三十五度時關火。將杯子移出。
Pour 80g of milk into a small cup or jar. Leave the jar or cup in a pot. Add water to the pot (outside the jar or cup) until it reaches half the height of the milk. Turn on the heat to the medium-low level. Add a cooking thermometer to the milk. Turn off the heat when the milk is at around 35°C. Take the cup or jar out.

加入 2.5g 的酵母粉到牛奶中。攪拌一會兒。靜置一旁備用。
Add 2.5g of dry yeast to the milk. Stir for a while. Set aside.
(3)
將高筋麵粉、低筋麵粉、砂糖、鹽、過篩的可可粉放入一個攪拌容器中,稍微攪拌均勻。
Leave the bread flour, cake flour, fine sugar, salt, and sifted cocoa powder in a pot. Stir them for a while.
(4)
加入蜂蜜(或楓糖漿)、雞蛋、軟化無鹽奶油、溫牛奶與酵母。不需要揉到出筋,只要用刮刀攪拌到看不見乾粉顆粒即可。
Add the honey (or maple syrup), egg, softened unsalted butter, and milk (and yeast) to the mixture. You don't need to knead them into dough. Just stir them with a spatula until there are no lumps.
(5)
將麵糊放入保鮮盒密封好,靜置室溫三十分鐘後,將麵糊折起翻面幾次,放回密封保鮮盒中,冷藏八至十二個小時。
Leave the batter in a closed container at room temperature for 30 minutes. Fold the batter over 2 or 3 times. Put the batter back to the closed container and leave it in a fridge for 8 to 12 hours.
(6)
將麵團移出冰箱,靜置室溫十五分鐘使其回溫。預熱鬆餅機。
Take the batter out of the fridge. Leave it at room temperature for 15 minutes. Preheat a waffle maker.
(7)
將麵糊切割分成十等份。
Divide the batter into 10 equal parts.
(8)
在鬆餅機的烤盤上噴些烤盤油,用乾淨的刷子塗抹均勻。
Apply some pan spray onto the mould of the waffle maker evenly (with a clean brush).
(9)
取兩塊麵糊,整成圓形,上下兩面沾抹珍珠糖,放入鬆餅機烤盤,闔上蓋子,烤三分鐘後,將鬆餅機翻面,再烤約兩分三十秒後取出。重複同樣步驟,直到烤完十塊鬆餅為止。
Round two pieces of the batter. Spread the pearl sugar on them (up and down). Put them onto the mould of the waffle maker. Lid on. 3 minutes later, flip the waffle maker over. About 2 minutes and 30 seconds later, take the waffles out. Repeat the same process until you have made 10 waffles in total.

由於各家鬆餅機的烤溫與功率不盡相同,烤的時間也會不一樣,如果烤完之後還沒有上色,可以再多烤三十秒觀察看看,一般來說,聞到香味就差不多熟了。
The waffle maker's baking time may be different due to different brands. Generally speaking, it's already well done when the smell of waffles comes out of the waffle maker.

在鬆餅機的烤盤上噴些烤盤油,用乾淨的刷子塗抹均勻。

取兩塊麵糊,整成圓形,上下兩面沾抹珍珠糖,放入鬆餅機烤盤,闔上蓋子,烤三分鐘後,將鬆餅機翻面,再烤約兩分三十秒後取出。重複同樣步驟,直到烤完十塊鬆餅為止。
