花生糖做法(古早味脆皮)How to Make Taiwanese Peanut Brittle

來做以前阿公最愛的花生糖吧... 

花生糖是一款常被臺灣人用來招待來訪親友的傳統甜點,尤其是在農曆新年期間。俗話說:吃甜甜,好過年;吃甜甜,大賺錢;吃花生,好事會發生。因此,花生糖也常被當做用來送人的伴手禮,尤其是純手工自製的花生糖,更是能讓人感受到十足的誠意。其實,只要照著我們這裡示範的步驟,自己做花生糖一點都不難。臺灣的花生糖有很多種,我們這裡示範的是古早味脆皮花生糖的做法。(文末附影片)

◆ Peanut Brittle

The lunar new year is coming again.
What kind of gift shall I prepare for relatives and friends?
As the saying goes, "Eating sweets brings about a great new year."
I'll make peanut brittle, which used to be Grandpa's favourite...

Taiwanese peanut brittle (peanut candy) is a popular traditional dessert to treat guests (relatives and friends) in Taiwan, especially during lunar new year holiday. It is said that eating sweets can bring good luck in the new year and eating peanut can help you live a long life. Therefore, it's also a great choice of gift especially when it's made by yourself, which is quite easy if you follow our video tutorial. There are various kinds of peanut sweets / candies in Taiwan. Here, we show you how to make the old-time brittle one. (See video tutorial at the end.)

材 料(Ingredients):

步 驟(Steps):

(1)

依序將水、黃麥芽糖、二砂糖、花生油、鹽加入炒鍋中,開中火。(此時不可攪拌,否則糖容易反砂。)

Add the water, maltose, fine light brown sugar, peanut oil, and salt to a frying pan respectively. Put the pan over medium heat. (Don't stir at the moment, or the sugar may be recrystallised and whitened.)

將生的帶皮花生仁用水沖洗三秒後,用廚房紙巾擦乾。靜置備用。

Rinse the raw peanut kernels for 3 seconds and wipe them off with dry kitchen paper towels. Set them aside.

將裁剪好的烘焙紙鋪上大約 18 公分乘以 24 公分的平盤(或其它尺寸,視成品大小與數量而定)。靜置備用。

Put a piece of cropped baking paper on an 18cm * 24cm baking tray (or other size, depending on the number and size of your final products). Set aside.

等糖漿煮沸後,加入花生仁,每隔一兩分鐘翻炒一次,用中火翻炒十分鐘。

After the syrup is boiling, add the peanut kernels to the pan over medium heat. Stir the kernels every 1 or 2 minutes for 10 minutes.

十分鐘後,轉小火,不間斷地翻炒 25 分鐘。(如果用的花生品種比較大顆,需再多炒五分鐘。)

10 minutes later, turn the heat down to the low level. Keep stirring the kernels continuously for another 25 minutes. (If you use other kinds of peanuts which are bigger in size, you'll need another 5 minutes to stir-fry the kernels.)

將炒好的花生倒入濾網瀝油。(炒好之後,油和糖漿會分開,糖漿會牢牢黏在花生仁上。)然後,將花生放在平盤的烘焙紙上。

Drain the kernels with a sieve. (The oil and syrup will separate after they are stir-fried, and the syrup will stick to the kernels firmly.) Then, put the kernels on the baking tray's baking paper.

用平的刮板將花生用力壓紮實、壓平。

Press the kernels hard and flatten them with a flat dough scraper.

趁花生糖還溫熱柔軟的時候趕緊切成 18 塊(或您想要的數量)。等花生糖變脆,就很難切得漂亮了。

Cut the peanut brittle into 18 pieces (or any number you like) when it's still warm and soft. You can't cut it beautifully once it has cooled off and become brittle.

切好之後,儘快將花生糖用袋子或保鮮盒密封起來,花生糖才不會變濕、變軟。

Preserve the peanut brittle in a sealed bag or food storage container right afterwards, or it'll become moistened and softened.

如果要拿來送禮,可選用好看的貼紙貼在袋子上(烘焙材料行有售)。

Put stickers on the bags of the peanut brittle if you'd like to give them away.

附 註(Footnotes):

用天然糯米和小麥草(小麥芽)做的麥芽糖,可以讓花生糖吃起來較香。如果真的買不到麥芽糖,可用水麥芽代替。

Using the maltose made from natural sticky rice and wheat sprouts can bring more flavour to the peanut brittle. Use the glucose syrup instead only when you can't find the maltose.

建議採用臺灣宜蘭砂地生產的九號花生仁,其與一般用來製油的花生不太一樣,看起來小小顆,嚼起來香味十足。

Peanut kernel No. 9 cultivated from the sand field in Yilan, Taiwan, is recommended here. It's quite different from other kinds of peanut kernels which are meant to be used for making peanut oil. This kind of peanut kernel looks smaller but has much more flavour.

先把花生仁洗過再用較衛生,但是稍微沖洗一下就好了,不可將花生泡水洗,否則花生會變軟,就不香、不脆了。

It's more hygienic to wash the peanut kernels beforehand. However, just rinse them for a bit. Don't soak them to wash them, or the kernels will soften up and become tasteless.

市面上的花生糖,為了要省時間,會先將花生炸過或是烤過再拿來炒,但是我們用小火慢炒的方式,不但吃起來較香,也較健康。

The peanut kernels are usually deep-fried or baked beforehand to make the peanut brittle on the market. However, the brittle will be healthier and have more flavour if they have only been stir-fried on a low heat.

將花生糖放在密封的塑膠袋或保鮮盒內,置於陰涼處,約可保存兩個禮拜。

The peanut brittle can be preserved in a sealed plastic bag or food storage container in a shady nook for about 2 weeks.
